Wan Hao at the Marriott Singapore Tang Plaza Hotel will for this year’s Dragon Boat Festival launch the Morel Mushroom with Pork Belly & Dried Scallop Rice Dumpling. Known in culinary circles as the “sacred mushroom”, the morel mushroom is specially imported from France and is packed with nutritional benefits. Coupled with a tender and fatty chunk of pork belly, the dumpling is packed with flavour ranging from the meaty earth to the fragrant use of 5 spice.
One of my favourites out of the line up is the new Black Truffle with Cordyceps Flower and Pork Belly Rice Dumpling. While the truffle is not distinct, and is at best a fleeting fragrance, I adored this rice dumpling for its generous use of savoury cordyceps flower that lent a part herbal part umami texture throughout. This is an East meets West take on the traditional rice dumpling that leaves my mouth watering for more.
The rice dumplings are available at Wan Hao Chinese Restaurant from now till 12 June 2016. Four variants are available: Morel Mushroom with Pork Belly & Dried Scallop ($18), Black Truffle with Cordyceps Flower & Pork Belly Rice Dumpling ($18), Signature Pork & Salted Egg Rice Dumpling ($12), 5-Grain Rice Dumpling ($9).
