Come now till 24th November 2013, Town Restaurant at The Fullerton Hotel Singapore will feature a gastronomical spread at the Chicken Rice Festival Buffet. The spread, on top and in addition to the existing international buffet spread, will feature a spectrum of delectable dishes including Singapore’s famed Hainanese Chicken Rice, Chicken Nasi Briyani, Ayam Penyet, Ayam Cincalok and the Chicken Devil’s Curry. Hungry?
The Hainanese Chicken Rice is popular known as Singapore’s iconic and one of the national dishes to try before leaving the country. Meticulously prepared by using only the freshest Chicken, each portion of delectable juicy goodness is prepared lovingly poached in hot water for about 50 minutes before soaking it in ice water for another 20 minutes. The chicken is then served with fragrant rice cooked with chicken oil, pandan and lemongrass for that lovely bite and texture. The chilli and ginger sauce by the side complement the dish well in bouts of robust spicy flavours. Alternatively, go for the roasted chicken delight. If you are keen for a different take, indulge in the Soy Sauce chicken which is also another favourite of mine.
One very unique dish that is worth mentioning is the Ayam Cincalok in Peranakan Style. Cincalok, a Peranakan spicy shrimp paste that is well enjoyed by my family when had along with hot steaming rice is taken to another level with its preparation as a dish. The spring chicken is braised for 2 hours with the Cincalok and then cooked with a good amount of herbs and spices before being served with rice, archar and prawn crackers. I enjoyed the tender chicken with the spicy and tangy cincalok lending a zesty touch and a full spectrum of bright flavours to the dish.
Those acquainted with the Eurasian’s Chicken Devil’s Curry will be pleased to note that the dish is making a continued appearance at the buffet line for this promotion. Town Restaurant’s Sous Chef Sunny’s is contributing to the line up with the Eurasian classic made from fresh chilli, galangal, lime juice, buah keras and mustard seed. The dish is prepared with chicken and bacon bone for that lively mix of flavours ranging from the tangy sweet, to the gratifying savoury. Excellent. For Bacon Bone lovers, be prepared to go early lest they disappear from the pot.
The Ayam Penyet, an Indonesian classic, is adapted by the restaurant to be specially featured in the line up. Served with a sweet java chilli sauce, the crispy fried chicken was mildly acceptable at best. Ayam Penyet at NUS is prepared very differently with a whole chicken thigh or chicken portion well flattened with a scattering of fried bits that is simply the main attraction with hot white rice. Having that same portion cut up and presented in finer presentations simply do not do the dish justice.
Town Restaurant’s Chicken Rice Festival Buffet will be held from 11th to 24th November 2013. The chicken rice dishes are a good introduction to the wide variety available out there in Singapore and will be the best place to be at if you intend to try a little of everything during your stay in Singapore in a single sitting. However, for a full appreciation of what is really flavourful Chicken Rice, you will definitely need to venture around Singapore for a closer look. As this is one dish that many Singaporeans can identify with, each will have their own personal favourite and preferences. Still, as this Chicken Rice Festival Buffet includes an international spread such as fresh seafood, sashimi, desserts and cheeses, you might be spoilt for choice with a little bit of everything else.
