After an exclusive dinner prepared by Michelin-starred Chef Jarad Gallagher at The Cliff Restaurant, I was game to return to the Singapore Resort & Spa Sentosa for their Sunday Champagne Brunch Buffet at The Terrace Restaurant. Located on Sentosa Island, the brunch buffet is nested away from the city centre and is an easy 10 minutes complimentary bus ride away from Vivocity. It comes complete with a fabulous pool side view, lush greenery, and an extensive dessert
bar room. For those who are there to engage in a little bubbly, this will be one of the places to be at as an escape for the weekend.

When I first stepped into The Terrace, I was pleasantly surprised by the comforting decor that exudes a warm, homely vibe. Complemented by large windows looking out to the greenery and the pool, a well varied buffet spread, I was excited before I even begun.
The Sunday Champagne Brunch Buffet comes with free flow Moet & Chandon Imperial Brut. A simple, perk me up bubbly that would leave you decently satisfied for the extensive brunch to come.

Starting off with the bread selection, I was heartened to see a good variety that looked fresh and amazing. The pretzel had a beautiful sheen, the cheese bun looked inviting, and the olive bread simply appeared appetizing. I started off with the cheese buns and some butter by the side. The bread was fluffy and richly flavoured, scented delectably with notes of slightly salty cheese. The pretzels were good and hearty, carried a nice texture on top of its beautiful deep mahogany brown hue. I would have gone back for more, but the buffet was just beginning.
If you are in the mood for some South Asian staple, freshly prepared Naans are also available from the outdoor counter.
Tucking into the buffet spread proper, the selection of starters were decent and varied, with a good amount of colour to liven the senses. I enjoyed the Chilled Mango Gazpacho Soup that was sweet and a little spiced, making it a refreshing beginning for the day.

As Chef Jarad Gallagher was in for the weekend, the Michelin-starred chef crafted up 5 special dishes, contributing to the menu. The first item on the starters table was the Temperature Controlled Poached Eggs, Hollandaise sauce, served atop a bed of crispy ‘noodles’. The egg was decently runny, with a well seasoned sauce that complemented the dish. The textures were a wide variation from the comfort and fluffy, to the crisp and surprising. I had two portions.

Guests looking for the seafood assortment will be pleased by an array of shucked oysters, mussels, prawns, crab legs, sashimi and sushi.
The oysters were fresh and clean, sweet and juicy. They were very enjoyable and perfect to start with. Having that with the side of champagne was simply enjoyable.
Although the Sashimi selection was small, I found the salmon and tuna to be fresh and inviting. Kudos goes to the tuna for nicely cut pieces that were sweet and full of fatty flavour. It went very well with the shoyu.
I honestly thought the buffet spread was only contained within the restaurant, only to discover that there was an entire outdoor section dedicated to dim sum, local delights, roasts, foie gras, tempura soft shell crab, lamb, curries and more.
Most of the dishes were a good selection well meant for an international crowd. Although I enjoyed the variety, I found items like the Foie Gras to be average and not tender soft, the Roast Chicken was also a tad salty for my liking. I will give my compliments for the deeply marinated satay, succulent roast beef and crispy soft shell crab. Guest Chef Jarad’s Crispy Duck Leg Confit with Truffle Fondue was also well received.

I am impressed by the freshly grilled King Prawns. Chock full of flavour, with a tender sweet meat that carries a clean yet slightly smoky fragrance, these were the real deal. These are highly recommended as we went back for seconds.

When you would have thought that the meal was somewhat over, discover the Dessert room located just off from the entrance corridor. I was stunned with the wide variety of cakes, little sweet treats, a Dark and Milk chocolate fountain, Local desserts, Macarons, Cupcakes and more. It was certainly very lovely to see groups of kids running into the dessert room to pick out their cravings. I could have tried everything, but I was too stuffed by then. Though I’m certain someone surely will.
I was flabbergasted that by the end of the meal, I simply couldn’t engage in their extensive cheese and cold cuts bar. It was a spectacular assortment with probably over 15 varieties up for the picking. Fruits are also available if you like a clear end to the entire meal.
From 9th to 12th July, Michelin-starred Chef Saul Bolton will be featuring an exclusive menu for all guests at The Cliff. On 13th July Sunday, he will also be presenting 5 special dishes in addition to the brunch buffet lineup. Do look out for it.
All in all, the Sunday Champagne Brunch Buffet at The Terrace is a strong recommendation for anyone who wishes to have an escape out from the mainland and partake in a certain luxury endowed by beautiful greenery against a villa-esque setting. The food, setting and ambience is perfect for one to momentarily take a breather. With an extensive menu and a gorgeous setting, this will surely be a feast for both the mind and senses.
