Relax and Unwind with Afternoon Tea at the Chihuly Lounge, Ritz Carlton Singapore!

Some days just call for high tea. Usually, they’re Fridays for me: you’re exhausted by the week, and you really just do want to sit down somewhere, with a lovely platter of little nibbles, and a good drink. And it won’t do either, to head somewhere noisy and crowded: you are seeking respite, after all.

May I suggest the Chihuly Lounge at the Ritz-Carlton, with their 8-course afternoon tea? I know what you’re thinking: 8 courses for tea?! TEA?! But oh, definitely worth it. Here’s how my experience with Stellar Dining Series 8-course afternoon tea goes (Note: now they are serving up the festive afternoon tea promotion).

A little early for alcohol perhaps, but never too soon for a tea cocktail.

Begin with the Tea Cocktail: a light concoction of fruit and tea, bright enough to perk up tired faces from the week. It’s accompanied by some light crackers and sambal: perfect start to the tea already.

At this point, conversation’s still light, and you’re drinking in the lovely surroundings of the Chihuly Lounge. And then the Coquelet Stew in Pie comes out.

Oooh, coquelet stew in pie!

It resembles a Yorkshire pudding with meat more than your classic image of a pie, but make no mistake, it’s pretty tasty too. With a truffle mash on the side, it really whet the appetite properly: I was all ready for the tea stand!

I like my tea stands big. And bigger.

Tea stands are really a thing of beauty: the bigger they are, the more imposing the look, and the greater the number of treats they contain! I will admit I used to be less enthusiastic, but after studying in the UK, where afternoon tea is serious business, I repented of my ways. Look at that beauty!

This is how a good Friday afternoon looks like.

Right in that wonderful stand were two types of scones on the top tier: the traditional scone, and the citrus scone. And then the savoury bites tier (middle) had dill cream egg salad, marinated salmon belly, iberico ham brioche, and a king crab and tuna mayonnaise roll of sorts that I quite enjoyed!

Scones are serious business.

Finishing off the bottom tier were the sweets: these were quite the treat, though I admit I was getting a little stuffed by the time we headed here. Chef Richard Long’s creations of hazelnut lemon, apple caramel, star anise raspberry, and ivory vanilla with fruit were one bite wonders. I enjoyed the mix of flavours, though I think I should have had a bit more tea to balance the sweetness of the tarts.

The Chihuly Vacherin: I have never had a dessert that looked like the environment it was served in!

Rounding off the meal after the tea stands were dealt with, was the Chihuly Vacherin. A mix of pandan ice cream and mango sorbet, there was also tangy lime jelly and a meringue shaped like the iconic sculpture in the Chihuly Lounge! Regrettably, I didn’t quite enjoy the coconut flake texture, but I’m not a huge fan of coconut flakes mostly. This was served alongside a chocolate and cookies trolley, but in all honesty, I was too stuffed by this point!

So, was my Friday afternoon good? You bet it was. I might just come back soon for some much needed slow de-stressing, along with the scrumptious food. You deserve it too.

Thank you Ritz Carlton Singapore for the invitation.

Jamie’s Italian Celebrates Christmas 2018 with Semi-Buffet & Set Lunches!

When I received an invitation to an early Christmas party at Jamie’s Italian, I could not have been more excited. I had a lot of fun at my previous visit to Jamie’s Italian for their pizza-making party, so I knew from prior experience that Jamie’s Italian hosted fantastic food parties. I looked forward to sampling the dishes that would be found on Jamie’s Italian upcoming seasonal menus.

The party kicked off with a cooking demonstration by head chef Ashley Lim. His first dish was the Pan-Roasted Norwegian Salmon. It was a treat seeing a professional chef take us through his process of pan-frying the salmon, making the sauce, and plating it in front of our eyes.

He also showed us how to cook Lobster Ravioli, a dish resplendent with mussels and tomatoes. This delectable pasta will be available on their New Year’s Day Set Lunch.

Main courses you will find on the Christmas Day Lunch Semi-buffet and New Year’s Day Lunch Semi-buffet were served in the style of hors d’oeuvres, neatly arranged on planks, with flagged skewers to pick them up with. It was not only well-presented, but also delicious; the Norwegian salmon was fresh and sweet. I loved it so much I ate three pieces.

Another tasty item from the lunch semi-buffets was the Tomahawk Pork Chop. Meaty and well-marinated, there was also a juxtaposition of texture with a piece of crispy crackling on top. The last meat I got to try was the Festive Roast Chicken. Like the others, the meat was cooked just right, full of juice and flavour.

A popular favourite of the night (also on the lunch semi-buffets) was the Truffle Porcini Arancini, a battered ball with a risotto filling served on fonduta.

No dinner party is complete without desserts. Jamie’s Italian had two great choices for us to try: Gennaro’s Tiramisu, and a sweet and Sticky Toffee Pudding. Both were lovely desserts, but I personally favoured the tiramisu, grabbing two portions.

The last activity of the night was a plank-decorating competition. Three contestants had to arrange the best-looking plank filled with sliced cheese, meats, fruits, and dip in five minutes. The winner would get a Jamie’s Italian Christmas Hamper (worth $300-600++) filled with premium kitchen ingredients and Jamie Oliver’s cookbook.

Chef Ashley gave us an example of a professionally plated board, and also introduced us to ‘music bread’, a pastry so-named because the sound it makes when it cracks was musical (kind of).

My plus one for the night, Derek, was one of the contestants. With Jamie Oliver’s visage behind him, he put together a beautiful plank.

Although he didn’t end up winning the competition, Derek was proud of his creation, and so was I.

At the end of the day, we enjoyed the delightful menu we had been given for the night. We look forward to Christmas when everyone will get to enjoy the treats that Jamie’s Italian has in store.

Thank you Jamie’s Italian for the invitation!

Fun is the Word at Jamie’s Italian Pizza and Prosecco Party!

The mind of a chef differs from the mind of one who merely dines. A diner can appreciate good taste when they encounter it. So can a chef, but intriguing flavours also instigate the gears of a chef’s mind to begin whirring. They wonder: how can I replicate this delicious meal in the kitchen? My mother, who has been cooking for my family since I was a baby, is such a person. She has recently become interested in making her own bread, and even tried her hand at making pizzas. So when I received an invitation to join a pizza-making party to learn how to make pizza from the fine chefs at Jamie’s Italian, I knew who my plus one should be.
