At mezza9, start off with the Baked Oysters “florentine” – spinach, mornay sauce in half dozen portions ($32). Freshly baked oysters are always a delight to tuck into. The cheese, beautifully browned at the top, leave a crisp yet gooey interior. And its umami nature accentuates the oyster’s fresh sweetness even further.
Else, go for the Truffled Egg with Black winter truffle, cream spinach and chicken veloute ($36). Simple yet decadent with the wonderful smoked earthiness of black truffle nicely paired with creamy egg in a crisp breaded shell. It reminded me a little of a decent ol’ scotch egg minus t he meat but still tastefully done to leave emphasis on the yolk and the truffle harmonizing together.
To share, order the Waldorf Salad ($16) with its generous mix of celery, pineapple, walnut and yogurt dressing.
Traditional Goulash ($22/$28) / Butternut pumpkin soup ($18) – I recommend the butternut pumpkin soup over the goulash for its subtly more complex sweet flavours in a slightly thicker dressing that just reminds me of Christmas in every portion.
To tuck in with a selection of mains, start with the Australian grass fed beef tenderloin “chateaubriand” (500grams serves 2 ; $118). Comes with fondant potatoes, festive vegetables and a side of sauces. The tenderloin is good as always, thick chunky portions in juicy cuts that is always a traditionally a pleasure.

What is Christmas without the Roasted Turkey ($42). Wonderfully golden brown with tender, juicy meat that packed in a good amount of flavour in each bite. I thought this portion of turkey this season at the Grand Hyatt was one of the best thus far.
Excitingly, the sides of Candied Chestnuts and Cranberry Sauce as gorgeously done with a good amount of sweet texture prepared within to well complement the turkey meat. I loved the candied chestnuts, and would definitely recommend guests to have more than just seconds where possible.
Desserts for the night included Berry Pavlova with Passionfruit Ice Cream ($16) and the Caramel Custard, Spiced Red Wine Poached Pear, Williams Pear Sherbet ($16). Decadent, sinful and sweet. Great for a charming ending though if you prefer something a little more complex with that warm fuzzy feeling, go for the next dessert of Christmas pudding, flambed with Irish whiskey and served with Vanilla Ice Cream ($16). The Christmas pudding was excellent, thick and moist with a good amount of whiskey to liven the senses.

Christmas dinner at mezza9, the Grand Hyatt Singapore this festive season, has proven to be a thoroughly enjoyable affair from start to end. I highly recommend tucking in to their festive menu available from now till 25th December. Though most of the festive dishes were decent, the shine and spotlight really falls on the the Baked Oysters, Pumpkin Soup, Turkey with Chestnuts and the Christmas pudding with Whiskey. And perhaps once dinner is over, take a stroll down Orchard Road to bask in the beautiful lights against the backdrop of a night sky. Hark! The Herald Angels Sing.
